I am constantly hearing all the Food TV people talk about using Panko Bread Crumbs. Apparently it is all the rage and I felt behind the times.
Then I saw them on display at Sappington Farmer's Market, my all time favorite grocery store. Trent is just starting to really like fish and loves anything breaded. So I slathered the cod with Dijon mustard, rolled the fish in the panko, and baked it in the oven.
I served it with sautéed spinach with garlic and brown rice. It was good and crunchy, I’m a fan. Let’s hear it for panko!
