I had the chimichurri sauce leftover from the July 4th barbecue and decided to use it for a sauce for some sole I had in the freezer. I also had some broccoli and a half a bag of dry barley. I boiled the barley and then tossed it with a lemon vinaigrette and herbs.
Presto, dinner is served!

Barley is one of those things that I never thought I would like (sounds too healthy) but really do!!
