April 9th, 2011

I’m loving using ricotta cheese as a pasta sauce.  It tastes delicious and the prep is quick.  We had a busy day with signing up for the pool (YES, cannot wait!), spinning class, a birthday party at our playground, and then home to enjoy the beautiful weather.  I was in the yard with the girls most of the afternoon and when dinner time came, Cooking Light's baby spinach and ricotta pasta sounded perfect.  I used angel hair pasta and added toasted walnuts.

It was good, even the girls ate it a little of it.  Another fantastic thing besides pasta is we are back having flowers in the yard and in vases in the house, one of my favorite things!  After the long and snow stormy winter, this spring is certainly well deserved!
