January 10th, 2010

One benefit of bitter cold January is oven roasted meals. They warm my belly and the house at the same time. Last night I made oven roasted chicken breasts, roasted broccoli, and green rice (brown rice and I made a spinach and parsley pesto and stir it in at the end). Another benefit is leftover roasted chicken for another meal or 2 later in the week, love it!
