June 2nd, 2010

I am a library girl.  In fact I abuse the library system many a times by reserving my limit of books and renewing them for the full 6 weeks.  I get tired very quickly of reading the same children’s books every night, so it’s a perfect solution.  However, I could spend a whole afternoon at Borders or Barnes and Noble.  So when I need to go for a gift or for activity books for the kids for vacation, I do tend to set aside an hour or so.  The girls love their kid section, I love the new fiction section, AND the magazine section.  So many magazines!  I often wander to the food magazines and one magazine caught my eye I haven’t seen before, Clean Eating.  I was curious and bought it.  After going through the whole thing, I only saved one recipe.  Chicken Pomodoro Angel Hair Pasta.  It had ricotta salada on top of it and Rachel Ray used that cheese in her pasta recipes too, so I decided to give it a try.  I love cheese and an excuse to try a new one.

I can now cross ricotta salada off my list of things to try and will probably not get it again.  It was firmer/spongier (is that a word??) and more bitter than feta, so in my mind feta is better, or goat cheese.  Really it was just tomato pasta with roasted chicken and cheese on top.  Forget Clean Eating and hand me a plate of chicken parmesan any day, that’s the way to eat chicken, pasta, and cheese!
