I have mentioned before that I love me a Nicoise salad, especially that of the tuna kind. Trent just started liking tolerating canned tuna. I haven’t tried fresh tuna yet, but it’s in my master game plan.
I used to be a server at Wolfgang Puck’s restaurant at the St Louis Art Museum and they made an arranged Tuna Nicoise that I never refused. I tried to recreate it. I boiled potatoes, then tossed them in herbs, salt, pepper, and olive oil.
Then I made a lemon vinaigrette and tossed butter lettuce in it and arranged the traditional ingredients on top of the lettuce. I also tossed steamed green beans in the vinaigrette too.
I absolutely loved it and even looking at this picture right now I am craving it for dinner tonight, but it’s not in the cards because it would mean a 5 pm trip to the grocery store with the kids. I think Trent kinda sorta liked it, but that is huge progress, so I am marking this down as a keeper in the rotation.
