Lookie here, we’ve got a yellow squash!

Lauren was excited to pick it.  See how big that plant is?  Well this is the first and only yellow squash to ripen thus far.  Me thinks this plant is putting lots of effort in leaves and little effort in squash growing.

Lauren had me cut some up and she tried it and liked it.  I was excited about that.  But truth be told, I’ve cut up more (purchased) yellow squash since and she poo poo’s it.  I guess she’s a squash snob.

Girls dinner, the bland version of the real dinner.  Unseasoned chicken, apricot, nectarine, squash and plain couscous.  Both the girls ate their dinner with no minimal fussing.

Adult dinner, seasoned chicken, yellow squash ribbons with mixed greens, couscous with herbs and kalamata olives.  Trent was going out of town the next day and would be gone overnight, so this dinner you see here was also my lunch and dinner the next day.  Cook it once, eat it three times, mama likey!

There may be only one but it came out great and was really good in the salad! I love the new way of 'shaving' the squash or zucchini!
