Lauren stopped taking naps right before she turned 4. But every once in a while she’ll fall asleep during Sydney’s naptime and I think it’s pretty darn cute. The pool really tires her out, but she laughs when I even suggest laying down for a bit. This afternoon she was O-U-T, even when Sydney woke up and started talking to her and patting her arm. It was a mellow Friday evening. When we hosted Easter we had a ton of ham leftover. I gave away alot of it, but I also froze some in a container. I decided it was probably time to bust it out and use it.
I made a ham and swiss cheese frittata.
Whole wheat biscuits
And a salad with shaved zucchini. It’s my new thing I learned from Teresa Guidice’s book Skinny Italian. Use a vegetable peeler and shave strips of zucchini into the salad (but stop once you get to the seeds). It’s yummy and I love not having to cook it before tossing it in the salad.
Girls dinner, Sydney loved the frittata and Lauren was ho hum about it, but was a fan of her biscuit.
