I made some guacamole. Trent and the girls all love guacamole as long as I puree it. Okay by me!
Made a big batch of salsa with all the tomatoes from the garden. For both the guacamole and salsa, I used my new boyfriend I nicknamed HB.
Mixed greens with corn, black beans, chives, and cilantro. The dressing is barbecue sauce mixed with ranch. I stole the idea from St. Louis Bread Company’s southwest bbq chicken salad. It’s good!
Cooking Light's Chicken and Guacamole Tostada with my southwest bbq salad. This is Trent’s plate and I added sour cream, which I also did for the girls. It was a hit with the whole family and easy to make. Any dish that involves me using tomatoes in a different way is a good thing!
