The Sunday of Labor Day weekend. Yesterday was officially a day of gluttony. We had a Mizzou football party at the Lamon’s house which consisted of all sort of good eats from buffalo chicken dip to pulled pork sandwiches to oven baked fries covered with bacon, tomatoes, and ranch. All to be followed by a Banana Split Cake made my Erin. Then for dinner we went to a deck party at my cousin, Angel’s house with a spread of all sorts of layered dips, chips, pulled pork, pastas, and general goodness. So Jenny was back in the kitchen today with a goal of home cooked meals consisting on little meat and heavy veggies.
I made a pasta for lunch from stuff from the fridge. It looks decadent, but the sauce is just thickened chicken stock with a little leftover gorgonzola cheese. Then it’s a whole bag of spinach, bag of frozen peas, sage, and portabella mushroom with fresh spinach linguini. After that we were pool bound and met Erin, Markham, and the kids there.
The girls playing “night night” at the pool.
That night was family movie night and Lauren picked Toy Story 2 at Blockbuster. I made a batch of chicken and dumpling soup with carrots, parsnips, peas, celery, and onion.
It was pretty good, but I tried something new and made the dumplings out of a whole wheat organic baking mix and winged the measurements. They were okay, but kinda gummy. I don’t think I’ll ever have a bowl of chicken and dumpling soup as good as my Grandma Coco’s, it was legendary. Whenever I make the soup, I think of her, miss her, and wish I watched her make it to learn her secrets (and not just ones relating to her soup).
